Tan Mimosa

TAN MIMOSA is a tannin condensed from exotic wood. The addition of Tan Mimosa to the filling of the fermentation allows to avoid the oxidation of the colouring matter and at the same time the fixation of the same. The colour is also maintained during bottle aging. The additions during the refinement and the micro-oxygenation, allow to maintain the colour and to avoid both the oxidations and the reductions.
